Get Your Mind Right! (Aka Motivation)

Your mind is really the key to any & all success. I won’t wax poetically on about how you can do anything you put your mind to (but this is true). If you decide you want something badly enough you can get it. It’s really amazing once you understand how to make your mind work for you not against you. It isn’t magic but it will change your life once you really learn to master it.

To remind myself of this daily I like to read books that reiterate this before going to bed & basically anytime I need a good dose of motivation. Not just gym motivation either but just general motivation too. Anything by Rhonda Byrne is fabulous! If you are not aware of the book The Secret then start with that as it was her first book. I am currently really into reading her book Hero. This motivational tactic may not work for everyone but it’s worth a shot!

Overstuffed Ranch Avocado

This is a quick mini meal that is vegetarian, low carb, high protein, gluten free & low calorie too. I added a special fun ingredient to this simple recipe-salad sprouts. They are really earthy & a little spicy which makes them a great addition to this ๐Ÿ˜‰

Ingredients:

*1/2 medium size avocado

*1 pouch ranch flavored tuna (or 1 plain water packed pouch of tuna with dry ranch seasoning mixed in until it has the amount of seasoning you want)

*1-2 tablespoons chopped red onion or green onions

*small handful sprouts

*about 1/2 cup finely chopped spring mix lettuce

*salt & pepper (to taste)

Scoop avocado out of shell. Save empty shell & put it on a bowl or plate. Using a fork carefully mix, mash, & smash everything together in a small bowl. Spoon the salad back into the avocado shell. It will be overflowing & look messy but it tastes delicious!

1 serving is 220 calories 17 grams protein plus lots of yummy healthy fat & veggies.

Garlicky Spinach Casserole (High Protein, Gluten Free, Low Carb, Vegetarian, & Low Calorie)

This is a ridiculously simple vegetable packed side dish that takes only minutes to prepare. It is really yummy with chicken, beef, fish, or ham. In the picture above you will see my beautiful Mom who asked me to make a vegetable dish for Easter dinner. This was my contribution ๐Ÿ˜‰

Ingredients:

*3/4 cup liquid egg whites

*3/4 cup shredded parmesan

*1 cup 1% cottage cheese

*5-7 ounces fresh baby spinach

*2-4 tablespoons minced garlic (you decide how intense you want the garlic flavor)

*a few dashes of salt & pepper (Don’t go too heavy-you can add more later. I added 7 grinds of each from my salt & pepper mills.

Preheat oven to 350.

Add everything in bowl & mix very well. It will seem kinda dry but the spinach will give off a lot of moisture.

Spray a small square dish or pie pan with nonstick spray. Add the spinach mixture to pan & place in oven. It’s fine if it is overfilled because it will shrink way down while cooking.

Cook for 35 minutes. Remove dish & stir well. Cook for an additional 5 minutes. Serve warm. This may be wet depending on how much spinach you use. You can use a slotted spoon to serve if you want. This also tastes awesome reheated the next day and it will be more firm (less wet) if you allow it to sit in fridge overnight.

Per serving:
135 calories
4 grams carbs
1 gram fiber
5 grams fat
20 grams protein

Want to Improve Your Muscle Tone Overnight???

So as impossible as this may seem (& it is pretty much impossible to actually truly improve muscle tone overnight) I do know something that may help enhance your muscle tone & highlight all your hard work. The secret is a nice golden tan. If you do not have naturally dark or tanned skin (like me) then you may notice that your muscles really pop more when you do have a tan. I’m not going to go into all the reasons why it’s not the best idea to tan because we all know it’s not really super healthy & good for your skin. Therefore that’s why I typically rely on a self tanner year round. I have had several people ask me what kind I use & I particularly love this self tanner by L’oreal called Sublime Bronze. I use it a couple times a week before bed. I just exfoliate & apply. Then rinse & moisturize in the morning. It’s easy to apply & stays on well plus it’s so convenient because you don’t need to drive anywhere. I also like Jergens Natural Glow as an alternative or to alternate with the Sublime Bronze ๐Ÿ˜‰

What to Eat When You’re Starving (what I eat when I feel like eating everything in site!)

We all sometimes feel ravenous. Women especially know what I mean especially when that monthly thing comes around haha! Those sugary cravings are the worst. I have a few things that I tend to eat when this feeling hits because they won’t sabotage your health & fitness goals.

Baby Carrots
This is my #1 pick! You can actually eat an entire bag of these tiny little orange veggies for less than 200 calories!! A 16 ounce bag is only 175 calories. When you’re feeling super hungry or emotional (if you’re a more emotional eater) these fit the bill perfectly. I confess I have eaten a whole bag many times in the past too lol! They are slightly sweet, full of vitamins & minerals, have a great crunch, & take a LONG time to eat. Perfect to thwart a junk food binge.

Fresh Strawberries
When you have a real sweet hankering strawberries are perfect. You can chow down on a whopping 50 medium sized strawberries for 200 calories. Buy them frozen & it’s an even greater binge buster. Try eating 50 & you may be surprised that it’s actually pretty hard to eat that many. They are packed full of fiber, vitamins, minerals, & even help whiten your teeth naturally yay!!

Air popped Popcorn
I know many people may already know this is a great snack because you can eat a huge portion of it. 6 cups popped is only 183 calories. If you didn’t know that then now you do! Air poppers are fairly cheap or you can pop corn in the microwave or on the stove too without oil (just google it & there are tons of search results). Toss it with a little salt. If you cannot eat it naked then add a little extra virgin coconut or olive oil (measure it!). It’s chock full of fiber, vitamins, minerals, & is super cheap too.

Hard Boiled Egg Whites
These are great with some salt & pepper for those salty cravings. I typically have hard boiled eggs on hand in my fridge already. They are packed with protein which will help fill you up plus you can eat 12 full eggs (white portion only) for just shy of 200 calories. I have never been able to eat more than 6 or 7 at a time even when I am ravenous. They are super filling.

Sweet Mini Peppers
I love these tiny little peppers. So cute & so delicious. They are sweet, crunchy, & once again packed full of lots of healthy vitamins, minerals, & fiber. 24 peppers equals 200 calories but it’s not likely you will actually make it through that many. Eating these will definitely help put your binge in check.

Try reaching for one of these next time you feel like binging. Keep some of these on hand so you are prepared to nip that ravenous feeling & your body will thank you ๐Ÿ˜‰
