Garlicky Spinach Casserole (High Protein, Gluten Free, Low Carb, Vegetarian, & Low Calorie)

This is a ridiculously simple vegetable packed side dish that takes only minutes to prepare. It is really yummy with chicken, beef, fish, or ham. In the picture above you will see my beautiful Mom who asked me to make a vegetable dish for Easter dinner. This was my contribution 😉

Ingredients:

*3/4 cup liquid egg whites

*3/4 cup shredded parmesan

*1 cup 1% cottage cheese

*5-7 ounces fresh baby spinach

*2-4 tablespoons minced garlic (you decide how intense you want the garlic flavor)

*a few dashes of salt & pepper (Don’t go too heavy-you can add more later. I added 7 grinds of each from my salt & pepper mills.

Preheat oven to 350.

Add everything in bowl & mix very well. It will seem kinda dry but the spinach will give off a lot of moisture.

Spray a small square dish or pie pan with nonstick spray. Add the spinach mixture to pan & place in oven. It’s fine if it is overfilled because it will shrink way down while cooking.

Cook for 35 minutes. Remove dish & stir well. Cook for an additional 5 minutes. Serve warm. This may be wet depending on how much spinach you use. You can use a slotted spoon to serve if you want. This also tastes awesome reheated the next day and it will be more firm (less wet) if you allow it to sit in fridge overnight.

4 grams carbs
1 gram fiber
5 grams fat
20 grams protein

    This recipe is great! I eat vegetarian and it’s hard to get a lot of proteins. This is perfect and it will work for my main meal. I’m making it tonight. Thanks for your great recipes, i just found your website and I will be back!
