Sweet Young Coconuts

Anyone that knows me knows I am a major coconut fan! I especially love the sweet young coconuts also called Thai young coconuts that you can find in most grocery stores. It is a little tricky to get into them & not as convenient as the bottled coconut waters but it’s worth the effort to crack open your own coconut. The pure coconut water inside is so delicious, low calorie & cholesterol free, packed with lots of electrolytes, vitamins & minerals like potassium, thiamin, manganese, magnesium, phosphorous and calcium to name a few.

To open these cute little coconuts use a big knife or cleaver to shave off the white husk at the top (pointed) part of the coconut to reveal the brown shell underneath. Then carefully “hack” into the shell a few inches below the very top of the coconut using the big part of a large knife or cleaver so that it becomes lodged in the coconut. You may need to whack it several times to achieve this. Wiggle the knife back and forth until you can pry up the top of the coconut with the knife or your fingers. Enjoy the fresh coconut water with a straw then scoop out the fresh coconut flesh inside.  Store coconut meat in refrigerator & use to add to protein shakes, smoothies, sauces or even just to eat plain 😉
