Super Low Calorie Cherry, Coconut, & Chocolate Cookies!!! (gluten free, low carb, & easy to make too)

These darling little cookies are perfect for Valentines Day or anytime of the year really.  They are low calorie, low carb, and gluten free but still deliciously moist and decadent tasting!  Give them a try and let me know what you think 🙂

  • 1 large egg
  • 2 large egg whites (from eggs not the carton kind)
  • 3-5 drops of either pink or red food coloring
  • 1/4 cup erythritol
  • 1/2 cup stevia
  • 1/2 teaspoon vanilla or vanilla butter extract
  • dash salt
  • 3 tablespoons melted extra virgin, unrefined coconut oil
  • 1/2 cup defrosted dark sweet cherries (either defrost overnight in fridge or in microwave but be sure to add the liquid that comes off them into recipe too)
  • 1/2 scoop whey protein powder (vanilla, cherry, or even chocolate would work perfectly)
  • 1/4 cup plus 2 tablespoons coconut flour
  • 1/2 of a good quality dark chocolate bar (you want 175 calories worth of chocolate-I used 1/2 bar Santander Columbian Dark Chocolate 65%)

Preheat oven to 375.

Add everything except chocolate, coconut flour, and whey protein into a blender or food processor and blend until smooth.  Chop chocolate bar into chunks and set aside.  Mix coconut flour and whey protein in large bowl.  Add wet ingredients into the flour mixture and stir well. Allow dough to set for about 5 minutes so coconut flour can absorb the liquids then stir in chocolate chunks.  Spray a 24 count silicone mold (that is safe for baking) or mini muffin tin lightly with non stick spray and evenly press mixture into molds.  Place on baking pan (if using silicone mold) and then bake for 15 minutes.  Please allow cookies to cool for 30 minutes in mold or tin before removing because they are very fragile straight out of the oven.

44 calories!!

2.9 grams fat

2.9 carbs

1.5 grams fiber

1.6 grams protein

You can eat five cookies for just over 200 calories 😉  These cookies are nice and moist.  Store in a plastic container to ensure they stay soft.  I am not sure exactly how long they stay good because they only ever last a few days max in my house lol!  Enjoy!
