Fit Chicken Cordon Bleu ;)

This is my take on that delicious classic. Normally breaded, fried, & filled with copious amounts of cheese I created an easy low carb, gluten free, protein packed version that still has plenty of cheese & flavor. The super easy & versatile alfredo style sauce I created can be used to top fish, shrimp, steak, veggies, or anything else you can think of that might need a little kick of flavor.

* .75 pounds boneless, skinless chicken breast (thin sliced)
* 1/2 package smoked ham (I used thin sliced Hillshire Farms)
* 1 cup raw baby spinach (can chop this but you don’t have to)
* Seasonings of choice (I used mrs dash onion & herb, Italian seasonings, & Mediterranean herbs)
* 3/4 cup 1% cottage cheese (I used Friendship no salt added)
* 1/4 cup Parmesan cheese
* 1 teaspoon (or more) minced garlic
* 1/4 cup hot water (can use a little more but too much will make it watery)
* salt & pepper to taste

Preheat oven to 450.

Line baking sheet with non stick tin foil or parchment paper. Season both sides of raw chicken generously with seasonings. Top each piece of chicken evenly with ham & spinach. Roll tightly (not super tight but tight enough to keep everything together) & secure with toothpicks. Bake for 25 minutes or until cooked thoroughly. Remove toothpicks before serving.

To make alfredo sauce blend cheeses, garlic, salt, pepper, & water in a blender or mini food processor until smooth. Use sauce to top chicken & whatever you choose as a side (I really like this with steamed broccoli). This makes a large amount of sauce so feel free to smother away!

Makes 2 generous servings. Per servings 366 calories & a whopping 66 grams of protein!! It is low fat, gluten free, high protein, & low calorie. This recipe is sure to keep you full for a while with all that lean protein it packs 😉
