Cinnamon Crumble Coffee Cakes-Low Calorie, Low Carb, Gluten Free, & High Protein

These little coffee cake type muffins make a great mini meal, snack, or even dessert and go great with coffee (of course haha!)

Cake

*1/4 cup soy flour
*1/4 cup almond flour
*1/4 cup coconut flour
*1 + 1/2 scoops vanilla casein protein powder (must use casein)
*1/8 cup stevia
*1/8 cup erithrytol
*1/2 teaspoon baking powder
*1/2 cup unsweetened vanilla almond milk
*1 teaspoon vanilla or butter vanilla extract
*1 teaspoon caramel, almond or additional vanilla extract
*1 large egg white
*1 large full egg

Cinnamon Crumble

*1/8 cup soy flour
*1/2 scoop vanilla casein or whey protein powder
*1 + 1/2 teaspoons coconut palm sugar
*1/2 teaspoon cinnamon (heaping)
*1 tablespoon solid extra virgin coconut oil

Preheat oven to 350.

Spray 9 muffin cups with nonstick spray.

Combine first 7 cake ingredients in large bowl. Whisk well. Combine rest of cake ingredients together in separate bowl & add to dry cake ingredients. Mixture will be very sticky & thick. Evenly distribute among 9 muffin cups.

Combine all crumble ingredients except coconut oil in small bowl. Add in the coconut oil using a fork to press in the coconut oil. This mix will be fairly dry. Add mix evenly to muffin cups & press down into cake using a fork to help it stick. Spray tops of each muffin with cooking spray and fill any unused muffin tins halfway up with water to ensure everything bakes evenly.

Bake for 12-14 minutes or until tops are a little browned & cakes are pulling away from edges of tins.

The mixture of flours & protein powder are really what help make this cake turn out well. I highly recommend making these the evening before & storing them overnight in plastic (plastic keeps things softer & glass keeps things crispy btw). This makes the cake even moister & helps the flavors come through better.

You can also certainly use all stevia, erythritol, or coconut palm sugar (FYI using all coconut palm sugar will add more calories to final product). I think a mix of sweeteners provides a more complex sweetness in the end result though.

Nutritional info will vary slightly depending on protein powder used. Makes 9 muffins.

104.7 calories and 9.5 grams protein.
