Cheesy Herb Muffins
- 1/ 4 + 1/8 cup parmesan cheese
- 1/8 cup soy flour
- Teeny pinch sea salt (can leave out as the cheese does add some saltiness)
- 1 teaspoon baking powder
- 3-4 teaspoons of any combination spices, herbs & seasonings you want. (I used 1 tsp herbs de provence, 1 tsp Mrs Dash onion and herbs, 1 tsp garlic powder, and 1 tsp fresh rosemary but I have tried it with many different combinations and it is always delicious)
- 3 egg whites
- 1/8 cup low fat cottage cheese
- 1/ 2 tablespoon extra virgin olive oil
Preheat oven to 350. Add all dry ingredients (first 5 listed) to bowl and whisk well. Then stir in egg whites, cottage cheese, and olive oil. Spray muffin tin with nonstick spray and divide batter evenly. Bake for 20-23 minutes. Will be golden brown and toothpick will come out clean when fully cooked. Once cooled store in fridge.
These muffins are super versatile, easily reheat in microwave and can be topped many different ways to make quick snacks or mini meals. I used turkey, lettuce, & tomato in one picture and in the other I topped it with tuna and celery. Some other easy and quick ideas for toppings are ham and an egg or a little tomato sauce, low fat mozzarella, & turkey pepperoni
Makes 6 muffins. Each muffin has 58 calories and 6 grams of protein. These are high protein, low carb and gluten free.

What if someone is allergic to soy? Is there a substitute?

I am sure equal amounts of whole wheat (or even white) flour would produce a very similar outcome. The difference would not really show in the calories or fat but the carbs would be about double & the protein would be about 1/3 of what the soy flour would be. So it just wouldn’t be as low carb, high protein or gluten free but it would probably still be tasty & it would still have similar calories. Let me know if you try 😉

Thanks, dude – Sal is allergic to soy… I, of course, am not. He will probably just have to fend for himself.

Or he could test it out with whole wheat & report back to me how it turned out 😉
