Power Granola-low carb, high protein, low calorie, gluten free, vegetarian, & high fiber

 

Power Granola

*Inspired by my sister Brooke’s recipe*

This yummy granola is much lower carb and calorie than traditional granola.  It also packs a healthy dose of fiber, protein, and good for you fats 😉

  • 1 /4 cup slivered or sliced raw almonds
  • 1 /4 cup chopped raw pecans
  • 1 /4 cup TVP (textured veggie protein)
  • 3 tablespoons raw pepitas (green pumpkin seeds)
  • 1/3 cup ground flax
  • 1/3 cup rough cut oats (can use gluten free, old fashioned or steel cut oats instead)
  • 2 tablespoons reduced fat unsweetened coconut
  • 1 tablespoon extra virgin (unrefined) coconut oil
  • 2 teaspoons cinnamon (or more if you want!)
  • 1 egg white
  • 2 teaspoons liquid stevia (can probably use dry too but I always use liquid)
  • 1 teaspoon coconut palm sugar (can use extra stevia, erythritol or another zero calorie sweetener of choice too)
  • 1 /2 teaspoon vanilla or butter vanilla extract
  • 1/16 teaspoon sea salt

 

Preheat oven to 300

Mix first 7 ingredients together in bowl. Add in salt and cinnamon.

In separate microwave safe dish melt coconut oil then whisk in sugars, egg white, and extract.  Add this to rest of ingredients and mix well.  Place evenly on foil lined cookie sheet that has been lightly sprayed with non stick spray.

Bake 30-40 minutes stirring every 10 minutes or so until desired level of crunch is achieved.  I like mine super crunchy.  Let granola cool and be sure to store it in a glass container to retain the crunch.  If you store this tightly sealed in cool, dry place it will keep well for several months.

This makes an excellent topper for Greek yogurt or casein pudding.

Makes 8 servings 1/3 cup each

Per serving:

132 calories

9.0 grams fat

7.5 carbs

3.1 grams fiber

5.2 grams protein
