MEATZA (aka low carb pizza made of meat) ;)

The idea of meatza is not my own however this recipe is my rendition of the glorious meatza. This amazing creation is low carb, low fat, gluten free, veggie & protein packed, & loaded with pizza flavors while still being under 400 calories for a very large portion. Seriously one of my favorite recipes that I have created thus far!

Crust ingredients

  • 1/2 pound raw, boneless, skinless chicken breast cut into chunks
  • 1/2 head of raw cauliflower (washed & chopped)
  • 2 egg whites
  • 1/8 cup Parmesan cheese
  • Salt & Pepper (to taste)
  • 2 teaspoons each garlic powder, Italian seasoning & Mrs Dash onion & herb

Toppings

  • 1/2 cup pizza sauce (Classico Fire Roasted highly recommended)
  • 1 cup low fat mozzarella (I used Weight Watchers 4 cheese Italian blend)
  • 17 slices turkey pepperoni
  • 1 cup chopped raw mushrooms
  • 1/8 cup Parmesan cheese

Preheat oven to 350. Grease a 9×13 pan (glass preferable) with nonstick cooking spray. Add all crust ingredients into a food processor and process until fully combined, scraping sides down as needed. Mixture will be quite wet. Spread crust into pan as evenly as possible. It is a little annoying to do this part but it is worth the effort! Bake for 25 minutes. Remove crust and turn broiler on high. Blot top of crust gently with paper towels to get rid of any excess moisture. Place crust back into oven and broil about 5 minutes watching carefully until top of crust is dry. Remove crust and return oven temperature back to 350.

While crust is baking cook mushrooms in nonstick spray in pan on cooktop. Add salt and pepper (small amount-you can always add more to final product). Cook until mushrooms are browned, softened & most of the moisture has been absorbed. Set aside. Once crust is cooked add sauce to top spreading evenly. Top with mushrooms then cheeses and pepperoni. Pop in oven for 5-10 more minutes or until cheese melts. Allow pizza to cool a few minutes before serving.

Makes two huge servings-half of an entire pan!
